The Systematic Approach to Tasting Wine
The SAT is the WSET's structured tasting framework, designed to develop two skills: accurate description and reasoned evaluation. It is divided into a descriptive section (Appearance, Nose, Palate) and an evaluative Conclusions section. Hyphenated lines require one specific term; e.g. lines allow personal vocabulary guided by the Wine Lexicon. The Level 3 SAT uses five-point scales (medium subdivided into medium−, medium, medium+) for greater precision. Appearance assesses clarity, intensity, and colour. The Nose assesses condition, intensity, aroma characteristics (primary = grape; secondary = winemaking; tertiary = ageing), and development (youthful → developing → fully developed → tired). The Palate covers sweetness, acidity, tannin, alcohol, body, mousse (sparkling only), flavour intensity and characteristics, and finish. Conclusions assess Quality Level using four criteria — balance, intensity, length, and complexity — and Readiness for Drinking. Outstanding wines score positively on all four criteria; very good on three; good on two; acceptable on one; poor on none.

Wine with Food
Food and wine pairing aims for food and wine together to provide more pleasure than either alone. Two food components make wines taste harder (more bitter, astringent, acidic, less fruity): sweetness and umami. Two make wines taste softer: salt and acidity. Sweetness in food reduces the wine's perceived fruitiness and sweetness — always pair with a wine at least as sweet as the dish. Umami increases bitterness and astringency, particularly problematic with low-tannin reds and oaked whites; foods high in both umami and salt (cured meats, Parmesan) are less problematic. Acidity in food is generally positive, enhancing the wine's fruitiness, but high-acid foods need high-acid wines to avoid flabbiness. Bitterness adds to bitterness in wine; prefer whites or low-tannin reds. Chilli heat amplifies bitterness, acidity, and alcohol burn — avoid high-alcohol wines. High-risk wines (high tannin, high acidity, high alcohol, complex) are harder to pair but can be more rewarding. Low-risk wines (simple, unoaked, slightly sweet) are rarely ruined but less interesting. There is no objectively perfect pairing — individual sensitivities and preferences always vary.

Storage and Service of Wine
Wine should be stored at a cool, constant temperature (10–15°C), away from light, vibration, and temperature extremes. Cork-sealed bottles should lie on their side; screw-cap bottles can stand upright. Extended refrigeration hardens corks and loses fizz in sparkling wines. Service temperatures vary by style: medium/full-bodied oaked whites 10–13°C; light/medium whites 7–10°C; sweet wines and sparkling wines 6–10°C; light reds 13°C; medium/full-bodied reds 15–18°C. Reds that are too cold taste thin and harsh; those too warm lose freshness and become muddled. Ice buckets should be filled three-quarters with equal ice and water. Glassware: large bowls for reds (maximise surface area); medium glasses for whites and rosés; flutes for sparkling; small glasses for fortified wines. Glasses must be odourless, colourless, and clean. Decanting is needed for wines with deposit; some young wines also benefit from aeration. When opening sparkling wine, hold the cork from the moment the cage is loosened, turn the bottle not the cork, and aim for a quiet phut. Once opened, wines lose aromatic intensity within days; vacuum and blanket systems can extend life.

Factors that Affect the Price of Wine
Wine price is influenced by both production costs and perceived value. On the production side, key factors include yields (lower yields = higher cost per bottle), land values (prestigious appellations command premium land prices), labour intensity (steep slopes, hand harvesting), ageing requirements (longer maturation ties up capital), and packaging costs. On the demand side, reputation and brand strength, critical scores and media attention, scarcity, vintage variation, and fashion all drive prices. A wine's appellation status (e.g. DOCG vs. DOC, grand cru vs. village) significantly affects its market positioning. Currency fluctuations, taxes, and distribution margins also influence final retail prices.

Wine and the Law
EU wine law divides wines into PDO (Protected Designation of Origin), PGI (Protected Geographical Indication), and wines without a GI. PDO wines (e.g. AC in France, DOC/DOCG in Italy, DOC in Portugal) specify geographical boundaries, permitted grape varieties, yields, and production methods. PGI wines (e.g. IGP/Vin de Pays in France, IGT in Italy) have fewer restrictions. Individual countries use traditional terms: France uses AC/AOP; Italy uses DOC/DOCG; Spain uses DO/DOCa; Germany uses Qualitätswein/Prädikatswein; Portugal uses DOC. Outside the EU, wine laws are less restrictive, with systems such as AVAs (USA), GIs (Australia), and VQA (Canada) that typically define geography only, not varieties or methods.

France
Bordeaux, South West France, Burgundy, Beaujolais, Alsace, Loire Valley, Northern Rhône, Southern Rhône, and Southern France (Languedoc-Roussillon and Provence)

Germany
Germany produces some of the world's finest Riesling in a cool, continental climate. Wines are classified by must weight rather than geography: Qualitätswein and Prädikatswein (Kabinett, Spätlese, Auslese, Beerenauslese, Trockenbeerenauslese, Eiswein). Riesling is the finest variety — high acidity, low to medium alcohol, intense citrus and stone fruit in youth, developing petrol and toast with age. German Riesling can be dry (trocken), off-dry (halbtrocken/feinherb), or sweet. Mosel produces the lightest, most delicate styles on steep slate slopes; Eden Valley and Clare Valley parallel Riesling comparisons. Rheingau, Rheinhessen, Nahe, and Pfalz produce progressively richer, fuller styles. Baden and Württemberg are the warmest regions, producing fuller reds (Spätburgunder/Pinot Noir). The VDP is a producer association classifying the best vineyards, with Grosses Gewächs (GG) for premium dry wines.

Austria
Austria produces world-class dry white wines from indigenous varieties in a cool continental climate in the eastern part of the country. Grüner Veltliner is the signature variety — medium to full-bodied, high acidity, citrus and stone fruit with a distinctive white pepper note; quality ranges from simple and fresh to concentrated and age-worthy. Riesling produces dry, full-bodied wines with peachy fruit, mainly from Wachau, Kamptal, and Kremstal. The Austrian DAC (Districtus Austriae Controllatus) system ensures wines reflect regional typicity. Wachau is the most prestigious region, with its own quality tiers (Steinfeder, Federspiel, Smaragd). Burgenland is famous for sweet wines (Beerenauslese, TBA, Ausbruch) benefiting from the Neusiedlersee's autumn mists, and for red wines from Zweigelt and Blaufränkisch.

Tokaj
Tokaj in north-east Hungary is one of the world's greatest sweet wine regions, producing wines from Furmint, Hárslevelű, and Sárga Muskotály (Muscat Blanc). The Bodrog and Tisza rivers create morning mists that encourage Botrytis cinerea. Furmint is the dominant variety — naturally high acidity, late ripening, and susceptible to noble rot. Aszú wines are made by macerating individually selected botrytised berries (aszú) in base wine; sweetness is traditionally measured in puttonyos (3–6). Under 2013 regulations, minimum residual sugar for Aszú was raised to 120 g/L. Tokaji Eszencia is made from the free-run juice of aszú berries — so sweet it can barely ferment, with extraordinary ageing potential. Szamorodni can be dry (száraz) or sweet (édes). Dry Furmint wines are growing in importance.

Greece
Greece has one of the world's most diverse collections of indigenous grape varieties (over 300 known), many planted in cooler, elevated sites to moderate the hot Mediterranean climate. The three most internationally recognised varieties are Xinomavro (Naoussa PDO), Assyrtiko (Santorini PDO), and Agiorgitiko (Nemea PDO). Xinomavro — high acidity, high tannin, fading colour — is compared to Nebbiolo and produces age-worthy, complex wines. Assyrtiko from the volcanic island of Santorini produces intensely mineral, high-acid dry whites; the island's basket-trained vines protect against strong winds. Vinsanto is Santorini's famous sweet wine made from sun-dried Assyrtiko. Agiorgitiko produces full-bodied, smooth, fruity reds with good oak affinity. Muscat of Samos is a notable sweet fortified wine.

Italy
Wine laws, Piedmont (Barolo, Barbaresco, Barbera, Dolcetto, Gavi, Moscato d'Asti), Veneto (Soave, Valpolicella, Amarone, Prosecco), Trentino-Alto Adige, Friuli, Tuscany (Chianti, Brunello, Supertuscans), Umbria, Marche, Abruzzo, and Southern Italy/Islands

Spain
Spain is the world's most planted wine country, with diverse regions from the cool, rainy north-west to the hot, arid south. Rioja DOCa (Tempranillo dominant, traditional American oak ageing) and Ribera del Duero DO (Tempranillo/Tinto Fino, modern French oak) are the prestige red regions. Priorat DOQ produces powerful, concentrated Garnacha and Cariñena/Carignan from slate soils. Rías Baixas DO produces aromatic Albariño whites. Rueda specialises in fresh, aromatic Verdejo. Cava (traditional method sparkling from Macabeo, Xarel·lo, and Parellada) is produced mainly in Catalonia. Key varieties include Garnacha (widely planted, high alcohol), Monastrell (hot, arid south-east), Airén (La Mancha, most planted overall), Verdejo, Albariño, and Manzanilla/Sherry varieties. Spain's ageing system (Joven, Crianza, Reserva, Gran Reserva) defines minimum oak and bottle ageing requirements.

Portugal
Portugal has a wealth of indigenous varieties producing diverse wines across regions with Atlantic and continental influences. Vinho Verde DOC in the north produces light, high-acid whites from Loureiro, Arinto, and Alvarinho (the finest sub-region, Monção e Melgaço, produces richer, more aromatic wines). Douro DOC produces powerful unfortified reds from the same five varieties used for Port (Touriga Nacional, Touriga Franca, Tinta Roriz, Tinta Barroca, Tinto Cão). Dão produces elegant, earthy reds and fine whites from Encruzado. Bairrada is dominated by Baga — a thick-skinned, high-tannin, high-acidity variety capable of age. Alentejo is a warm, extensive southern region producing rich, full-bodied reds from Aragonês (Tempranillo), Trincadeira, and Alicante Bouschet.

USA
The USA uses the AVA (American Viticultural Area) system, which defines geography only (not varieties or methods). California produces the majority of US wine; key varieties are Cabernet Sauvignon (Napa Valley, especially warmer floor AVAs like Rutherford and Oakville), Pinot Noir and Chardonnay (cooler coastal areas: Russian River Valley, Santa Barbara), and Zinfandel (Dry Creek Valley, Lodi). The Central Valley is the source of high-volume inexpensive wines. Oregon's Willamette Valley is famous for elegant, high-acid Pinot Noir and Pinot Gris. Washington's Columbia Valley (east of the Cascades, rain shadow, irrigation essential) excels with Merlot, Cabernet Sauvignon, Syrah, Chardonnay, and Riesling; winter freeze is a significant risk. New York's Finger Lakes uses glacial lakes to extend the growing season, producing excellent Riesling.

Canada
Canada's main wine regions are Ontario and British Columbia. Both operate under the VQA (Vintners Quality Alliance) system, requiring 100% provincial grapes from V. vinifera or selected hybrids. Canada is world-famous for Icewine — made from grapes frozen naturally on the vine — with Riesling producing the finest examples (superior acid structure and aromatic complexity compared to the more widely planted Vidal hybrid). Ontario's Niagara Peninsula benefits from Lake Ontario's moderating influence. British Columbia's Okanagan Valley is a semi-desert in the rain shadow of two mountain ranges; extremely long daylight hours aid ripening, and large glacial lakes moderate temperatures, enabling white grapes in the north and red in the warmer south.

Chile
Chile's wine regions run along a 900km north–south strip between the Andes and the Pacific. The main cooling influences are the cold Humboldt Current (bringing fog and cold air inland through river valleys) and cold Andean air descending at night (creating a large diurnal range). Cabernet Sauvignon is the most planted variety; Carmenère is Chile's signature grape — late-ripening, herbaceous when underripe, full-bodied with black fruit and herbal notes when fully ripe. Sauvignon Blanc and Chardonnay perform best in cooler coastal and southern sites. Key regions: Maipo Valley (Cabernet Sauvignon, often minty), Colchagua Valley (full-bodied reds), Casablanca and San Antonio Valleys (cool, white varieties and Pinot Noir), Maule Valley (Carignan from old bush vines), Elqui and Limarí (northernmost, high quality Syrah and Chardonnay respectively). Chile is largely phylloxera-free.

Argentina
Argentina's wine regions are concentrated in irrigated oases in the Andean foothills, ranging from Salta in the north to Patagonia in the south; altitude (many vineyards over 1000m) is the key cooling influence. Malbec is the flagship variety — deeply coloured, full-bodied, high smooth tannins, black fruit; style becomes more elegant and floral at higher altitudes. Torrontés is the white signature — intensely aromatic, floral, medium body and acidity, best from Cafayate in Salta. Bonarda is the second most planted red. Mendoza dominates production; key sub-regions include Luján de Cuyo and Maipú (Central Mendoza, fine Malbec), Uco Valley (highest, coolest sites in Mendoza), and San Rafael (southernmost, Chenin Blanc). Hail is a regular hazard; organic viticulture is increasingly important.

South Africa
South Africa's wine regions lie in the Western Cape, cooled by the cold Benguela Current (west coast) and the Cape Doctor (strong south-easterly wind). Mountain ranges create diverse microclimates and aspects. The Wine of Origin (W.O.) scheme classifies wines by Geographical Unit, Region, District, and Ward. The most important regions are Stellenbosch (fine reds from Cabernet Sauvignon, Merlot, Syrah, and Bordeaux blends), Swartland (innovative, premium Chenin Blanc and Syrah, often dry-farmed), Walker Bay and Elgin (Pinot Noir, Chardonnay), and Constantia (Sauvignon Blanc, Vin de Constance). Chenin Blanc is the most widely planted variety. Pinotage (Pinot Noir × Cinsault crossing) is South Africa's unique variety. Méthode Cap Classique is the term for traditional method sparkling wine.

Australia
Australia produces diverse wines across a large landmass. The GI system covers Zones, Regions, and Sub-regions; the South Eastern Australia super-zone allows cross-regional blending for high-volume brands. Shiraz is the country's most important variety — full-bodied with ripe black fruit, spice, and soft tannins from warm regions (Barossa Valley); leaner and peppery from cooler areas (Heathcote, Geelong). Cabernet Sauvignon is best from Coonawarra (distinctive terra rossa soils, eucalyptus character) and Margaret River. Riesling from Clare Valley and Eden Valley is uniquely Australian — dry, lime-forward in youth, developing petrol and toast. Chardonnay is the most planted white, made in styles from full, buttery (traditional) to restrained, elegant (modern). Hunter Valley produces iconic, low-alcohol Semillon that develops extraordinary complexity with age. Tasmania and cool coastal areas produce sparkling wines from Chardonnay and Pinot Noir.

New Zealand
New Zealand produces wines with a distinctive cool-climate profile — high acidity, vibrant fruit, and purity of expression — from a maritime climate. Sauvignon Blanc from Marlborough is the country's flagship wine globally — intensely aromatic with elderflower, passion fruit, and high acidity. Pinot Noir is the second most important variety, with excellent examples from Central Otago (powerful, concentrated, continental climate), Martinborough, and Marlborough. Chardonnay, Pinot Gris, and Riesling are important secondary varieties. Hawke's Bay produces the finest Bordeaux-style blends and Syrah. Central Otago is New Zealand's only continental climate wine region, producing full-bodied, high-alcohol Pinot Noir. Canopy management expertise is world-class, developed to manage the naturally vigorous vines.
